Montego Bay villas
with a chef
Nearly every staffed villa in Montego Bay includes a cook in the rate. What is almost never included is the food itself. The normal arrangement is that you agree menus on arrival, the cook shops at the market or supermarket, and you settle the grocery bill at cost, separately from the accommodation.
How the food budget really works
Expect to spend meaningfully less than you would eating out, because you are paying supermarket prices plus nothing. Villa cooks generally shop two or three times during a week’s stay and keep the receipts. Ask at the outset whether alcohol is being bought on the same account, because that is where the bill usually surprises people rather than the food.
What a Montego Bay cook will actually make
Ask for Jamaican food. Most villa cooks in this parish have been cooking it their whole lives and will do ackee and saltfish, escovitch fish, curry goat, oxtail and rice and peas far better than they will do a risotto. They will cook whatever you ask for and be gracious about it, but you are wasting the best thing about a staffed villa if you order pasta all week.
Hours, and what happens at night
Most Montego Bay villa cooks work breakfast through dinner and leave after clearing up, rather than staying overnight. If you want a late dinner, say so in advance rather than at seven in the evening. Larger estates on the Tryall side more often have staff living on the property, which changes what is possible.
